We tried all kinds of wacky solutions including a continuous onslaught of ice bags but we just weren’t getting the results we desired. We were introduced to a unique and underutilized lager yeast strain that has the ability to ferment at higher temperatures. Once we brewed our first batch with this yeast we fell in love with the ability to reach the smoothness of a lager while still obtaining the full flavor of an ale. After we brewed countless versions of our Pilsner we landed on a special
